Red
Our red grape varieties – Grenache, Carignan and Syrah – are harvested in the same way as for rosé. The grapes are de-stalked and then placed in thermo-regulated vats which enable long fermentation that is conducive to extraction.
During this stage, the pump is switched off, allowing the piping to do its work, and thereby reducing the risk of oxidation. Next comes the maturing stage which varies in length and can take place in barrels or vats, depending on the wine.
The estate’s red wines are ample and generous, expressing the richness of our southern terroir. They have an aromatic complexity which is complimented by exceptional length. Structured and rare, with an elegant colour, they will delight the most discerning palates.
