Rosé
Harvested only in the morning so as not to pick the grapes when they are too warm, our rosé wine comes from directly pressed Grenache and Cinsault grapes.
The grapes are de-stalked and then pressed very gently. The grapes are stored in a cool environment, inside the press. The juice from the press is separated from the skins and placed in thermo-regulated vats for 24 hours to allow any sediment to settle at the bottom.
This is a crucial stage, enabling us to obtain a very clear juice. Our juice is not pressed or filtered; it is just drawn off at the right time. It will be ready by the end of the winter.
