The olives harvested on the estate are taken to a traditional mill. They are crushed using grinding stones and then pressed between disks before the oil is decanted.

This process dates back 2,000 years and we are still using it.

We produce a unique variety of olive oil that is a symbol of the area surrounding the city of Nice.
